Place all ingredients except Vegetable Oil into the mixing bowl. Blend together on slow speed for 1 minute. Scrape down. Mix on medium speed for 4 minutes. Add Oil slowly over 1 minute on slow speed. Scale 450g into Madeira cake tins. Bake at 180ºC until baked through ±55 minutes. For muffins: scale 60g into papered muffin tins, score muffin with a pallet knife (dipped into oil) and bake for ±30 minutes. Cherries, Chockex Nibs or Blueberries can be added for different variants (10% to batter weight).
